Cabbage and Tomato Soup or Cabbage Stir-Fry...again?

Don't rub your eyes. You ARE seeing cabbage repeats here weeks after weeks because I enjoy this vegetable as you have witnessed in my cabbage stir-fry. Another way to enjoy cabbage is in soups and any day can be a soup day with cabbage and tomatoes.


More superpower cabbage (高丽菜) is good for you! It is one of the 13 most powerful superfood. Remember how I did it without oyster sauce; and in a separate occasion, added nori/seaweed to stir-fry with noodles? I am quite surprised that many of you do not use or have oyster sauce. Good! Other than garlic and ginger aromatics, the fresh earthy flavors of shitake mushrooms also perform its duty of making this a tasty stir-fry. You do not have to use a lot of mushrooms - about 3-4 medium-size fresh shitake will do. And again 2 tablespoons of ground chicken (Note: can be omitted for vegetarians, just add more mushrooms )


Stir-Fry Cabbage with Fresh Shitake Mushrooms 
Ingredients: 2 cloves garlic, minced; 1-cm knob ginger, minced; 2 tablespoons ground chicken; 3-4 fresh shitake mushrooms, thinly sliced; 1/2 teaspoon dark soy sauce, 1 tablespoon Chinese cooking wine; 1/2 head round cabbage, sliced into bite-sizes; salt and white pepper to taste

Directions: Heat some oil in pan/wok, add ginger, then garlic and fry till fragrant. Add the ground chicken, breaking up into smaller bits while frying to brown it, adding soy sauce, and then cooking wine (Note: drizzle cooking wine along the edges/side wall of the wok for more aroma due to heat of the pan). Add mushrooms and mix well with the meat bits. Add cabbage, fry and mix with mixture. Add 3-5 tablespoons of water, then cover pan and allow to simmer till cabbage turns tender. Add salt and white pepper to taste, then simmer till mixture reduces.


I am in the cabbage cult. I can have stir fry like the above (a side-dish to plain congee or rice porridge), making a one-dish meal with noodles; or opening up my rice cooker of steamed cooked rice and pour the entire cabbage mixture into the pot (it works because there is not much gravy in this stir-fry and would not make rice grains soggy and too wet) then toss the cabbage into your rice, make it flavored rice (non-fried).

Making Cabbage and Tomato Soup in the rice cooker can be really easy too. And many of you will be with me in a soup of light tanginess of tomatoes and sweetness of cabbage and tomatoes.
